Producing exceptional coffee is a year round process. Although the harvest is from December through February, the growing year actually begins immediately following it.
During March and April our workers prune the mature plants that need to be cut back to be re-vitalized. They also cut the weeds, using machetes and shovels, and use the weeds to compost the coffee. No herbicides are used. In April and May, banana, plantains, corn, squash and green beans are planted. It is also the time to spread needed minerals such as calcium. In May the coffee plants bloom, creating a vast field of white flowers. After a few days the flowers fall and a tiny nub of a coffee cherry appears. During May and June new coffee plants are set into the rich soil created by our workers. They cut weeds again in June/July and in September/October. During November we fertilize with composted organic materials. |
